Leche Fries

 

Leche (or a long slice) fries:

Take Nesshe cheese (soft cheese), and pare it clean, and grind it in a mortar small. Draw yolks and whites of eggs through a strainer, and cast thereto, and grind them together. Then cast thereto sugar, butter and salt, and put it all together in a coffin ( shell) of fair pastry.

Let bake brown, and then serve it forth.
